Lactose analysis in the control of delactosed and lactose-free products

Lactose is a complex sugar (i.e. disaccharide) composed of two simple sugars (otherwise called monosaccharides): glucose and galactose. Lactose is naturally present only in milk and its derivatives. In milk, lactose is the main sugar (about 98% of the sugar composition) and it is not only present in cow’s milk, but also in milk from goat, donkey, sheep, buffalo, as well as in breast milk.
